Armenian Ayluzan – Eggplant

Any recipe using eggplant is worth having a look at. You don’t need to try just have a good look at it. To me, it is a wonderful vegetable. I can remember the first time we planted them there was so much of it, I pickled some of them later with oil and vinegar.

Fried in a light dough served with an ice-cold beer is great!

This Armenian idea turned out lovely.

You don’t need to use them full, cut it in thick slices, it will be just as great. Pre frying them and using cooked potatoes will shorten cooking time.

I freeze tomatoes whole when they are cheap and used some here. It is advisable to remove the skin.

Spices used: salt, mixed herbs, ground laurel leaves, ground coriander, ground black pepper.

The difference between mixed herbs and mixed spices; all green herbs we buy is available in dry form. Spices are sold dry, like nutmeg, cinnamon, cloves and are commonly used in sweet dishes like Christmas cakes and mince pies.

Dollas approved: 5/5

We all enjoyed the dish and if you like eggplant this will be to your taste as well. Shout out to Bobbi’s Organics, a local female farmer who supplied us with two kinds of eggplants variants. You can find her veg at Rabbits Hole.

Happy cooking Dollas.

  1. I was wondering if you ever thought of changing the page layout of your site? Its very well written; I love what youve got to say. But maybe you could a little more in the way of content so people could connect with it better. Youve got an awful lot of text for only having 1 or two pictures. Maybe you could space it out better?|

  2. I think everything posted made a great deal of sense. However, what about this? what if you typed a catchier post title? I am not suggesting your information isn’t good., but suppose you added something that makes people want more? I mean BLOG_TITLE is kinda boring. You ought to glance at Yahoo’s home page and see how they create news headlines to grab people interested. You might try adding a video or a related pic or two to grab people interested about what you’ve written. Just my opinion, it would bring your website a little livelier.|

  3. Howdy! Someone in my Facebook group shared this website with us so I came to look it over. I’m definitely enjoying the information. I’m book-marking and will be tweeting this to my followers! Wonderful blog and wonderful design.
