Vegan Bibimpap, or buddha bowl

We started looking into Korean food, and one of the Youtube Channels we love watching is Maangchi. One of the videos we keep going back to, is Korean Bibimpap.

Obviously she serves it with meat, and egg, but we will not let that stop us.

This one started out pretty daunting, Pa Dolla was on the fence about liking it, but it was absolutely amazing.

Ingredients

  • Carrots
  • Red and yellow peppers
  • Beets, cooked
  • Brussel Sprouts
  • Baby Spinach
  • Snow Peas
  • Courgettes, baby marrows
  • Onions
  • Garlic
  • Soy Sauce
  • Salt
  • Rice Vinegar
  • And rice, absolutely important you salt it

Start with the rice, we salted it to taste.

Cook the beets, and chop them fine.

Now slowly and patiently prepare the vegetables, one at a time. Each one must came to the right texture, making each flavor stand out in this wide mix of colors and tastes.

We fried them in the wok with low oil, adding a tablespoon of soy sauce every time. Do not use too much, and do not add salt, all of the veg are going to come together so make sure it is not too salty.

Serve the veg on a bed of rice, and we topped it all off with a Dollas Nugget. We used white beans and various spices to create a perfect little mock chicken snack, wrapped in crunchy sesame seed. It is a favorite, and we are obsessed with it.
