Today we are taking the Armenian pumpkin dish and adding some South African ideas for a new vegan meal.
- 1/2 cup dry Soy Mince – add enough water to cover
- 1 large onion
- 1 clove of garlic
- 1 cup frozen peas
- 1 cup rice
- 1 tsp coriander
- 1 tsp cumin
- 1 tsp salt
- soy sauce, to taste
- sage, optional
- vegetable stock/boiling water
This was easy and a substantial meal. Remember that the rice is not cooked and you will need enough water to do that. Add more liquid during cooking if necessary.
Wash and clean the butternut, scoop out the pips. Fry chopped onions with chopped garlic. Add the hydrated soy mince and flavor with spices and soy sauce. Mix the uncooked rice in and place it at the bottom of the dish. Add vegetable stock or boiled water, enough to cover the rice mixture. Place the butternut on top and cook in the microwave.
Cooking time in the microwave was 10 min 100%, and then 15 min 50%, making sure the rice, as well as the pumpkin, is cooked.

The butternut was the better choice, I would think for the ghapama as well.
