Today we are bringing you something a bit different.
Something deliciously straightforward and completely vegan. There is no need to add flavors or textures, it is a celebration of taste and enjoyment.
The crepe is a staple in South African households, we call them pancakes. We eat them sweet and savory, and this one is a staple. With traditional flavors.
- Vegetable stock
For the pancakes/crepes
- 1 cup Flour
- 2 cups Water
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon apple cider vinegar
- 1 tablespoon oil
We made two fillings. Simple flavors to celebrate them.
Fry the onions, add mushrooms and stock. Stir all the while until fully cooked.
Fry the onions, add garlic, add spinach. Steam for a while until cooked.
Mix the batter, add to get as much as you need. And then start the process of making the crepes. It is a lengthy process, one that takes a bit of patience and some technique.
Then stack it up, pancake, filling, pancake, filling, until you have the perfect stack. We made a small side salad. Bananas, strawberries, and tomatoes.
